Okroshka Recipe:

Ingredients:

  • 2 cups boiled potatoes, peeled and diced
  • 1 cup boiled beets, peeled and diced
  • 1 cup boiled carrots, peeled and diced
  • 1 cup radishes, diced
  • 1 cup cucumber, peeled and diced
  • 1/2 cup green onions, finely chopped
  • 1/2 cup fresh dill, chopped
  • 2 hard-boiled eggs, peeled and chopped
  • 4 cups kefir or buttermilk
  • 1 cup cold water
  • 2 tablespoons white wine vinegar or apple cider vinegar
  • Salt and pepper to taste
  • Ice cubes (optional)
  • Sour cream and additional dill for serving

Instructions:

  1. In a large bowl, combine boiled potatoes, beets, carrots, radishes, cucumber, green onions, chopped dill, and hard-boiled eggs.

  2. In a separate bowl, mix kefir or buttermilk with cold water. Add vinegar, salt, and pepper. Stir well.

  3. Pour the kefir mixture over the chopped vegetables and eggs. Gently stir to combine.

  4. Taste the okroshka and adjust the seasoning if needed.

  5. Refrigerate the okroshka for at least 1-2 hours to allow the flavors to meld and the soup to chill.

  6. Before serving, you can add ice cubes to individual bowls if you prefer a colder soup.

  7. Serve the okroshka cold, garnished with a dollop of sour cream and additional chopped dill.
